My husband and I always try to cook and bake in order to get the most nutrition out of our food. Raw honey makes snacking taste yummy while you do something great for your health at the same time. We came across this recipe by using what we had in our cupboards.
The taste was extraordinary! Sweet with a little bit of savory taste. We felt like we were really treating ourselves to something new and interesting with different flavors and enough protein to squelch hunger and give new energy to our bodies!
Recipe: Raw Honey Oat Cake
3/4 th cup oats
1/2 cup ground oats or oat flour
1/4th cup Bob’s Red Mill paleo flour (can sub for more oat flour)
1 cup sourdough starter (if you don’t have sourdough starter sub for an extra banana)
Stir and mix
In separate bowl
2 bananas (mash them down)
1/2 cup coconut oil
1/4th cup honey (can sub honey for 7 dates blended with 1/4th cup water)
2 Tbl spoons Black Cumin seeds (also known as Sativa Nigella seeds) soaked in water
1 Tbl spoon chia seeds soaked in water (aka chia egg) (if you want to sub for actual egg you can)
1 tsp Cardamon
1 tsp ground English breakfast tea leaves (optional for taste and antioxidant energy boost)
*1 Tbls flax seeds
Stir and mix, then combine flour and oat mixture and stir and mix
Pour over parchment paper on a 8×12 glass pyrex pan
Bake at 350F for 15min
2 Tbls honey- drizzle on top after slightly cooled so you do not lose any micronutrients-antioxidants or vitamins
*2 Tbl spoons whole flax seeds
(Sprinkle on top or mix in or 1 Tbls sprinkle 1 Tbls mix)
2 Tbl spoons bee pollen sprinkle on top
Gently push down with a spoon into the honey
Stick in the fridge for best storage or eat warm from the oven
